The post title says it all really.  I've made this recipe recently and really liked it.  It's nothing original or terribly amazing, but it's a great weekday meal (see post title for reasons why: ).  

What makes it is the cashew topping (it says unsalted, but salted cashews were what I had and it turned out great) - I also doubled (at least:) the amount of soy sauce just cause I like soy sauce - do what your palate prefers.

  1. Looks good. We'll try it. I made this tonight, Spicy Korean Pork Medallions with Asian Slaw. It's sorta like the Thai pork recipe but quicker. The slaw was very good and the dish, though quick and easy, looked impressive with the medallions served on top of the colorful slaw.
