Honeyed Mango and Chicken Saute with Toasted Cashews - This recipe is yummy and a great way to use the beautiful mangos that are available right now. When I first made this, I added some pomegranate seeds for color (see below) - the next time I made it, I diced up a green bell pepper and threw that in (it does need extra veggies). Enjoy!

(PS - To make it more healthful, I slightly reduce the amount of oil used, and because I'm a soy sauce fan, I drizzle a little extra soy sauce in each bowl. That makes it even better.)
